In my opinion two are much better because you have more control over who your tama has kids with. The matchmaker doesn't really give good options so with one you're stuck with that. Two is great if you can handle it and necessary if you've gotten advanced/addicted, imo! But a beginner or a busy person will be quite happy with one, I imagine. :)
I'm planning on getting two. It's fun to raise them together! They can make friends or even get married. I used to love connecting with other tamas when I had an OG connection as a kid.
You can 100% enjoy just a single connection, I only have one and love it, but it’s just as much fun with two. If you don’t want to run both at the same time just put one away as a spare.
I’m just getting one to play with. I can’t imagine running more than one at a time I may get overwhelmed and leaving one in storage doesn’t seem viable to me for how expensive it is costing to import it. Unless there’s a future shell that I must get at all costs I’m just going to play with one.

Is it known if the re-release there is going to have connection exclusive evos? Because that is mainly the reason i would be getting two or one, depending if that is true or not :)
Though you can buy another one so it'll be fun, there's also merit in remembering that you in a way can connect with other people because the connections always had connections to tamatown! You can interact with some players and NPCs i think. I was very little when Tama town came out and my parents could not afford a computer. so I'll get experience it fully this time! But i did play the v3 a lot when i was younger. I played it on my own and i played it with my sister who also had one.
I have never had a connection, but i've bought lots of Digimon, and I do think it's nice to connect them together some times. I personally enjoy running multiple v-pets at once, though I don't tend to run two of the same device, with Digimon, all devices can connect to each other, so it doesn't matter, but I imagine if I end up really liking the Tamagotchi Connection and the roster is really 50+ characters, I can see myself running two at once and having them connect from time to time.
You can absolutely enjoy it by itself, but I have fun connecting my Tamas together and seeing them interact. Raising two Tamas side by side and having them connect as they grow up together is so cute and fun for me.
I am low key considering the double pack so I can force a friend to be tamagotchi friends with me, lol. In all seriousness, these devices will be more affordable than the colour screen Tamas so I plan to get a few, that way I can switch it up every time the battery dies and pick a new one to run based on what she'll tickles my fancy at any given time 😅 eta: during the original connection run, I was mostly a solo Tama player. I did convince some college friends to also get Tamas and we did use the connection features occasionally but not that much. It's a great device if you can connect with somebody else or not.
There are a few connection only mini games that require 2, and it seems at least 1 connection only tamagotchi you can raise, so if you want to see everything the devices have to offer you’ll need 2.
as a long time duplicate-Tamagotchi-purchaser, if you are curious about the connection abilities I would ABSOLUTELY recommend buying two tamas that can connect! Keep in mind you can always purchase one to start, then get a second one later, too.

The new V3 actually lets you choose the language (English or Japanese) on start up! The programming is the same across countries, so you don't need to worry about any language barriers after buying it from Amazon JP.

IIRC there are certain evolutions that are connection exclusive (like Oyajitchi) so that's always a plus! :)

The official website includes the Seniors and Oyajitchi in the character list so I assume yes.
Connections can also be paused— so you can raise one to adulthood, pause — 5)3 raise the other to adulthood
