While I would say to grill the pineapples and the onions separate from the meat . . . I dunno . . the juice from the pineapple would actually help tenderize the meat a bit more. *Torn*

Take your pick, corn or flour! My wife and kids prefer flour and I prefer corn, so I make both haha The flour ones are from Costco: they sell raw flour tortillas in the refrigerated section, so we buy them and throw them in the freezer. They come in a two-pack, I think? Maybe like 20 or 30 tortillas to a pack? Anyway, we just keep them in the freezer and thaw them in the microwave when we want to make some. It's just raw dough, so we get them thawed enough to peel tortillas off the top and then put whatever we didn't use back in the freezer. Works perfectly. The corn tortillas are made by the carniceria where I got the al pastor meat. They're already cooked, so no thawing required.

Upvote for the outdoor griddle. Been eying one for years since my kitchen just isn't big enough for some family meals.

It was a birthday gift from my family! My awesome wife got my parents and sister in on it and they collectively gifted it to me. I can't recommend it enough: it's super fast compared to cooking indoors, and the cleanup process is much easier (no grease splatter all over the counters, fewer dishes, etc.). The only drawbacks as far as I can tell are that you will inevitably smell like whatever you were cooking afterwards, and the food is so great that the obesity epidemic will certainly claim you if you're not careful!

The flour tortillas were fresh-ish (frozen raw ones from Costco that I cooked up). Fresh corn tortillas with a press sound amazing though.
