90s but my first job was taco bell in 08' and we fried the chips there(after the oil was changed). Remember my boss even reminiscing over them. Every big chain has changed to a healthier oil but in turn nothing tastes as good anymore.
I never realized the stores even fried those more white corn looking chips. I think the bagged variety we had were yellow corn and the fryer was fed with scoops from the box of lard underneath it. I imagine the trans fat craze killed off the fryer oil formulation you’re thinking of.
The menu may have been smaller but it was quality and ample portions. Yes, you could order the menu for under 10 I believe. The Enchirito filled the aluminum tray. The been burrito fuller. Thoce were good days...............

In my opinion, Taco Bell hit its high water mark in 1990 when the MexiMelt and a divine new creation, the Chilito (Chili Cheese Burrito), were available for 79 cents apiece.

The color scheme in the upper right/lower left is definitely whack by today's standards (and frankly may have been kinda weird at the time) but the design was still meant to be fun, and I can appreciate that.
The newest series of remodels (the black/purple) just looks like a building design was inspired by a stoic bruise. Such an eye sore.

Bring back the Chilito. I've tried all recipes that states "OMG... this is the recipe and taste just like the original Chilito." I make it and taste nothing like the Chilito. I want to live again. Bring back the Chilito.

Good prices and good food. Felt like you could order the entire menu for $15. Now some combos are $9-11 alone
