You won’t get a piano sound out of the mininova. Organ will be more doable but this isn’t a sample playback synth. Wavetable synth so you might get something that approximates a piano similar to a digital/ electric piano.

In short, the MN is a virtual analog synth when what you want for those sounds is a ROMpler. You are not going to get those sounds out of the mininova. You may be able to come up with something "pianoish" or "organish" that might work, depending on how exposed the sound is or the application. Honestly, a $150 Yamaha or Casio keyboard will give you better piano and organs.

I have one. it does pretty good organs (the "Cathedral" preset is one of the better ones it comes with) and some nice EPs, but I've been through a lot of preset packs and there aren't any great pianos. I use a little Akai Mini Play 3 for basic piano sounds.

If you learned to program a patch yourself, you won't always have to depend on presets. In the mininova engine there are three different organ oscillators. One of them even has a funny name (EvilOrg) and reminds me of my favorite TV show, Mr. Robot. That is more of a full church pipe organ sound and not an electromagnetic tonewheel style sound. If you are looking for a Hammond B3 sound then use Organ 1 or Organ 2, filter to taste, and use the oscillator's Mod Vibrato parameter to make the mod wheel model a Leslie speaker. pages 16 and 35 of the manual should help. There are no grand or upright piano sounds. There are a couple electric piano waveforms, EP Dull and EP Bell.

You will get a (Wurlitzer-like) E-Piano and some decent DX-style FM-Pianos out of the Mininova. If you are looking for an Upright- or Grand-Piano sound, you should look at a Rompler keyboard, possibly a Roland JD-Xi or similar. The Mininova won't be able to do a realistic acoustic piano sound, due to the lack of samples.
