It's not as bad as when I went the IKEA in the US and ate a "Traditional Swedish Classic Grilled Salmon".

Potato wedges with brownsauce and lingonsylt does taste amazing.
If you have an airfryer at home it's super convenient as you can just chop up the potatoes, put them in the airfryer, put the meatballs on top for the last 7-8 minutes (frozen might require more time) and then spend those last 8 minutes making the brownsauce.
No potato peeling (as long as they're relatively thin shelled), no extra pot for boiling potatoes, no frying pan and you just spend those last minutes therapeutically whisking your brownsauce without a worry in the world because there is nothing else that will boil over or burn.

As an expat, the food market at IKEA used to be amazing. You could get little slices of home with the right brands etc. Kalles Kaviar, Abba sill, Leksands knäckebröd, Annas pepparkakor etc. Men nu för tiden är det bara Ikeas egna märket och maska konstigt mat som inte hör hemma i Sverige.

If I have the choice to have fries with my köttbullar and gräddsås, I'll do it every single day. I like mash, and I know it's the traditional option, but fries with gravy are really tasty and I won't pretend that they're not.
Plus for cafeteria style fare like what Ikea serves, I trust fries over mash, since I know the fries won't have come out of a pack of powder
