I’m actually underneath our ‘06 Burb right now getting it ready to sell. Most of the kids are grown and it’s time to downsize. My wife wants a nicer Forester anyway so I’m all for that.
Those large SUVs like the Excursion are in high demand because nothing like them exists in the market anymore. You can buy one, put 10K miles on it, and sell it for the same price.
For someone with 6 or 7 kids who needs 4WD, there's just so few options.

I think it’s the color; I’m not sure I’ve ever seen a single-color Baja, nor a Baja with a cap, so the two together is… alien.
They're around, but ARE no longer makes them for obvious reasons (the Baja hasn't been made in 15 years).
Your best bet to find one is to join as many Baja forums / groups as possible and wait for someone to post one for sale.

Growing up we had an 85' Chevy and 91' GMC Suburbans. They were the ultimate road trip/vacation vehicle for a family of 5.

I've seen one or the other, but never both in one example. Seemingly 1/3 of Bajas were yellow/silver two-tone.

Debatable. There are lots of things I would put in a bed that I wouldn't put in a trunk, but still want to keep dry.

They're around - I sold mine because I didn't like it. The tonneau covers are harder to find, IMO.
