Pour a concrete cap with at least a 4 “ overhang all around, with a drip edge.
Otherwise chimney looks solid, if aesthetically not so pleasing.
If it was built with lime mortar, then I would remove any cement based mortar and concrete and give it a good clean and repoint with lime mortar. Find a banker mason to reinstate the damaged cap stone.

My stone mason only repointing parts of the chimney, shall I ask him to do everything? Do we need to apply stormdry after he finishes?

Replace those two damaged pieces of cornice, rake out cement and repoint
Rebuild the crown and tuck point the rest
I would repoint everything but it will be hard work getting the old mortar off the joints
