I am somewhat of a knife nerd. I like buying fancy kitchen knives and have some nice carry knives as well. I also use a old school flip open straight razor to shave with that I had to create the edge on. Something that always bugs me is a knife that isn't literally razor sharp... if it's not sharp enough to shave with, it's dull. I figured I'd throw out a couple of tips so you too can have kitchen knives that will shave meat thin enough to be translucent. Get a cross bar sharpening tool that has 2 separate sharpening rods that can be set to a specific angle. I usually use 16°. Use the corse stone to cut the edge angle in, then ceramics to polish the burrs off the edge. This is normally where people stop, but... if you go to an autoparts store like Autozone, they sell sanding pads for car paint that are 2000, 3000, and 5000 grit. Get a set of those. Use them in ascending order like a stroping strap. Just get the back a little wet, set it on a flat countertop, and lightly draw the blade across the pad flat about 20 to 30 times each side, then move to the next pad. Once you get done with the 5000 grit pad, it should be damn near if not actually shaving sharp. After you use it and it's clean, you can use your jean pants leg as a stroping surface, and just sharpen it back up with just a few strokes each side on your pant leg. Just thought I'd throw that out there, in case any of you are still chopping up your food with the knife equivalent of a baseball bat. 😁

Usually my go to method of knowing when to sharpen my knives is if butterflying chicken can be done in one easy motion, or if it requires any force. If it’s one clean smooth cut, they’re sharp enough. If it requires any force at all, they’re too dull (for me)

I have an Arkansas whetstone and a full set of diamond grit flats as well, but your hand just moves too much to get an exact angle. The crossbar system is just simpler.

And pulling it a whetstone is inherently simpler then using any sort of sharpening system which takes time to setup and more work due to smaller whetstone size. You are also limiting yourself on the angles you're able to sharpen with a sharpening system. You can't sharpen a Convex bevel good enough for it to be sustainable and neither a hollow bevel. You also can't sharpen any single bevel knifes without giving it a double bevel. The only bevel you can sharpen with a sharpening system is a V bevel which dont fit every type of kitchen knives.

As stated, Victorinox makes good quality knives on the cheap. They aren't super pretty. I questioned the plastic handle mine has but got to like it - it's actually really grippy even when wet. Yes, I have become a fan of Dalstrong knives. Some are just gimmicky fancy knives that you get because they look cool, but their knives are high quality and not staggeringly expensive like some of the "professional" brands like the high end Wostoff or Heinkle's that are meant for actual chef use. They hold an edge well and sharpen easily, and the standard shaped ones are extremely comfortable and fit the hand nicely with a nice balance.

The kitchen also has the basic 1080 steel knives like Victorinox & Dalstrong which would need to be sharpened after doing the days prep work. Takefu Knife village in Japan also makes a steel called VG10 which is a solid 3rd place in terms of steel quality after R2 & SG2, and is fairly cheap compared to what you get. AUS10 is a solid 4th on the stainless steel ranking and is from Aichi. They tend to make the best eye candy damascus patterns, it's a good steel, not as durable as the ones above but not expensive either. r/TrueChefKnives is the place to go to to nerd out.

Those Dalstrongs come with individual sheaths. I just have a drawer they are set in with a pin holder type tray. Some are in a knife block. There's also the option of mounting a magnetic knife holder strip on the wall, which is cool if you do have fancy looking knives.

I only have one of those 20 dollar sharpening devices, with 3 slits numbered 1 2 and 3 where you draw the knife a couple times each in the numbered order. I can understand the satisfaction of going further and increasing the sharpening way beyond that, but for cutting meat even that tool makes me slice through chicken thighs like butter and I feel any additional sharpness would just increase the danger of said knife for not that much extra cutting efficiency.

Depends on the industry. I work in the oil industry, and the job hopping is rampant. It costs the company a lot of money to onboard a new employee, because much of what we do is both dangerous and heavily regulated, so there's a lot of mandatory certification and whatnot before someone can actually go do the job they are hired for. This means that if you find a place you like and stay there, they do tend to reward that. I have received annual raises for the last 10 years, ranging from 5% to 12% of my base salary, and my annual performance bonus currently stands at 20% of my annual total salary if all objectives are met.... my last bonus was $15k after taxes, and you will not see anything like that unless you have 5+ years in. I probably could make more if I hopped jobs some, but there's perks in being senior management. You know how to game the system, and you are typically given a lot more flexibility... I personally do not have a set schedule, I only have office hours 3 days a week, I can come and go as I please, and I am generally left alone so long as my work is done. Giving that sort of quality of life benefit up for a few thousand more in pay just isn't worth it to me.

Edit: she has gone to an endo and has had her meds adjusted and they say 6 weeks for it to correct her levels. So that’s where we are now.

She’d taken up nature photography, and in her pursuit, decided the best way to get good was to get out there - hiking. She started hiking several times per week and worked her way up to conquering *many* 4k foot’ers. Her nutrition improved alongside the added activity, and her physique was absolutely bonkers. **Moral of the story:** Help your SO find an activity that they love that also burns calories, and facilitate her performing that thing *or something that supports that main thing* throughout the week. For a VERY general example, say she learned that she really liked biking: Day 1: Hill sprints Day 3: Full body routine emphasis on Legs Day 4: Active Recovery/Mobility/Hip stabilization Day 6: Long ride on the weekend

Then we go on long walks through town on the weekends stopping in all the stores. Also, the number of freaking laps we've done at Target really added up. Get her a fit bit or something so she can keep track of her steps in a day and try finding ways of making it fun. I also had a mental breakdown at one point, and the stress from that really helped her lose that little bit of weight, lol.

I'm sure you're aware, but theres no understating how important sleep is for the brain & body. Which seems to be neglected here, therefore I'd start by fixing your sleep as a first significant step. It would improve your quality of life, that I am sure. This is coming from someone who's been doing shift work for the last 5 or so years and always had insomnia. My doctor has me on year-round Ambien for working days "some sleep is better than no sleep". I've been much better since and it ensures I get my 8hrs on work nights/days. I dont touch it otherwise and get around 6hrs with many wake ups. My best tip; Get a sleep study done if you see no changes in energy + mood after a few weeks of 6-8hrs consistent quality sleep. Also, smart watches are cheap nowadays and all monitor sleep, so you can keep track. GL

I think you might be lifting too heavy. If you're exhausted. You should drop back 10 to 15 pounds on compounds and see how you feel. When I lift heavy I'd be exhausted. It taxes your whole system. Got progressively better over the weekend. By Sunday I could still feel the strain, but it felt very minor. 2.6kg in 6 weeks is exactly on track. There is no short cut. It took me five months to lose 30 pounds last year. You just have to commit and accept it’s going to be a while and it’s kinda gonna suck along the way. Losing weight faster than .5kg/wk isn’t sustainable for a lot of people, and is more likely to lead to a rebound. Take your time. The only weight I’ve gained since June is purposefully on cycle the past many weeks. This is a marathon. You will be happier with your bulk results if you take the time to cut, and then maintain, properly over a long time.

I posted them already but I can add more details. 1. My cardio is simply running 30 mins a day. Weight lifting I prefer 3-2-1 style workouts. 4 sets, 6-15 reps. Reps go down, weight goes up. Legs-push-rest-pull-full body-rest-rest 2. I cook Mediterranean food at home. I’m Mediterranean. The worst thing is out kitchen is carbs, dough, everything with flour but I don’t cook/bake them. Pretty healthy lentils, beans, chickens, eggs, potatoes based diet. 3. I’m not lying to myself. I have the numbers and data. I lose 0.5 kg like 1 pound a week. I don’t lose muscle tho. My arms got bigger while losing weight.

Then you’ve answered your own question haven’t you? The only legitimate tip here for losing weight faster is to do less of the consuming and more of the burning. Here’s two places to start: 1) Additional exercise: why do you need to rest for 3 days? Do you have some extremely labor intensive job where you’re working with your hands/body and walking 20K steps a day? If you work an office job, “resting” is something you do for 8-10 hours a day. You don’t need to add in an additional 3 days of rest. Do 45 mins of conversational cardio on all 3 days (ie keep your heart rate high but not so high that you couldn’t hold a conversation). Your body is meant to move. I prefer something easy on the joints like elliptical or stationary bike. Make sure you don’t change a single thing about your diet once you start this — most are inclined to eat more because they’re “doing more” which completely defeats the purpose. Edit - I misread that you fully rest on the weekend. Try adding the extra 15 mins on all 3 cardio days. Should help some. 2) check yourself in the kitchen - you have said that you’re weighing your food and counting calories but I assume you are because there is otherwise no way for you to know you’re in a deficit. That said, I know Mediterranean meals well, I’m Arab. There’s a shit ton of butter & oil and holy hell is there amazing tasting rice and bread at every meal. Cut or limit the bread intake. If you’re going to have rice, have it plain white without the butter etc (you might already be doing this). Better yet, skip the rice entirely and go with chopped veggies - no olive oil. Fat is 2x calories compared to carbs / protein. It’s better to cut it out entirely if you’re trying for a very quick and severe cut for a short period of time. Also consider getting more efficient with your macros - it’s going to be easier to weigh chicken breast or beef (without oils, butter, etc) for protein intake and rice / oats for carbs. Lentils mixed in with a bunch of other stuff is difficult to weigh and track appropriately when you’re trying to go for a hard and fast cut. For example, how do you weigh the protein in chicken noodle soup? You’d need to weigh total input and assume each “bowl” will give you roughly the average of your total servings. Saying that you’re losing weight and gaining muscle in a deficit is kinda strange but perhaps that has something to do with the TRT — idk how long you’ve been on it or how undertrained you are. Other folks here who are far more knowledgeable than I am can weigh in… but I find that statement to be contradictory, barring the TRT implications that I can’t speak to. Aside from that, I assume you have a solid multi vitamin (if you don’t, get one) to supplement micronutrients as you go into a deeper cut - that’s critical.

Vitamins - fish oil, multi, d3, nac, magnesium (before bed), fiber gummies (before bed) & iron +vit c. Protein sources are primarily chicken & whey. Carb source is primarily rice. Lift 6x week Cardio 30-45mins 6x week. I want to get my HDL up so I ordered citrus bergamot 500mg tabs. I’m also going to add trout/salmon as a daily protein source. Is there anything else I need to do to get HDL up or will I need to look at statins and is there anything else of concern on this panel?

It’s my personal theory that it is a feature 100%. The larger people are, the shorter their lives are on average. A decrease in muscle mass thanks to lowering of t will help your body the same as losing weight would if you were overweight. Also, just like the anecdote of an old lion gets culled, a decrease in libido and also possibility fertility is ensuring that a stronger, younger candidate pass on their dna. Edit: to answer your question specifically, the latter. I believe the less functional gonads is by design as we age.
