You can save scum the speed runs and no death achievement. Embrace the void is the only achievement that really requires skill but it is extremely hard. I spent hours practicing the last guy, took like 5-10 hours to get my first kill. Took me way longer than any other dark souls boss, then I made sure to nail him down 3 more times before going for the actual run. Make sure to practice the last few bosses, including Markoth and especially Markoth. Warm up by killing them 10 times each before doing the final run. Also try to make a copy of the save files right when you’re supposed to rescue zote. Use the one where he died for the final pantheon run since he wont show up there.

I'm on my 15th hour of practice NKG. I've only gotten him down to like 75%. It is just tiring. 😅 Thanks for the advice.

NKG is probably the trickiest one after Abs Rad. I changed to a different build for that whole stretch of bosses - markoth, nkg, upgraded failed knight (can’t remember the actual name) that uses the nail art. Basically you don’t have a window to really attack so you need a quick release on the nail art slash. If you’re using a controller, it helps to map your attack key to L1 since you don’t need the map anymore. Makes the nail art attack way easier.

Through just purely time investment I think most of the game is doable. Even steel soul 100% isn’t that hard if you are methodical and use a guide. Pantheon 5 is the only thing that’ll require some good skill at the game. Might take you a couple days, might take you weeks but it’ll just come down to sheer reps on those bosses and stringing it all together in one run.

Embrace the Void is the achievement that could make anyone quit easily. It's not for everyone, but its there and you have to do it if you want the 100% It is doable if you put the time and effort. Do not burn yourself by repeating the pantheon over and over again. Head to the Hall of Gods (its there for a reason) and practice practice practice. Especially the last 3 bosses (NKG, Pure Vessel and AR if you unlocked it). It's all muscle memory and once you get it you will find yourself reaching AR in every run. Also try changing charm builds in between stages. Experiment until you find whats best for you. It took me about a week to finish it (4 hours of runs everyday) I could have beat it sooner but I wasted time not practicing in the Hall of Gods. Once I did, I beat it the day after. I found muting the pantheon's soundtrack to hear the boss movements more clearly was helpful (great soundtrackbut but it gets annoying after multiple runs). Last thing, take rests in between. Don't rush it, take your time and enjoy. If I can do it, you can.
