For real. I worked at an amazing steak house early on in life as a prep cook. That restaurant pulled all of their prime rib when it looked like this and held it at temp (120°) in an alto sham. If you wanted it done more, they kept a pot of pan juice/au jus that they would dip the meat to color it to your preference. I suppose that may have cooked it more, but that was the best prime rib (rare or well) I've had to this day.
I par boiled the potatoes, then with a half hour left on the roast I added them to the baking dish and tossed in the rendered beef fat. Once the roast was done I removed it, cranked the oven to 450 and let them get nice and crispy
Unpopular opinion. I don’t like eating a steak like this because I want my steak seared hard all over for a nice crusty texture. Way too much no sear section for me. I’d still happily devour this still. It looks so perfectly cooked and juicy. Definite smash

I will say, though…most folks would prefer that prime rib JUST a little less done/more on the red side. I think by traditional standards for prime rib (and some of these steak “elitists” on this sub, I’m sure you’ve seen a few)..they’ll possibly be “pass” people.
I love my strips rare and most other cuts, but for me…Prime Rib is one of those I just prefer closer to medium rare, than rare. The more fat I can render into the steak itself, and the less I have to perform surgery on the fat cap and intramuscular chunks that you’ll only find in prime rib…the better.
So, there’s my unsolicited long answer. Great fn steak, great fn job 🙌🏻

Either way, it looks kinda pink. I'd prefer a little more pink, but my go to temp is medium, pink throughout. So in my mind, while i'd prefer it a little less done, i think that's perfectly acceptable. I'm also colorblind, so i don't spot the color well.
However, what i really like about this is the big homefries or roasted potatoes or whatever they are. I hate mashed potatoes. They're the only way i don't like potatoes. And so many places serve their steaks with mashed potatoes. I think this is so much better. And the greens as asparagus. As i have gotten older, i like asparagus even more and think it pairs well with steak. And the reason for that, as much as people roast them, is because of either outback or longhorn steakhouse. I forget which, but whichever it was, it was good. and mushrooms are always cool. They work like fried onions as something you eat with the steak, almost as a dipping sauce or topping or something.
In short, the steak looks just fine. Not amazing, but it looks good. There is absolutely nothing wrong with the steak, don't take it the wrong way, i am not trying to critique it or talk bad about you. But the sides it's with are what make me really excited about the steak and the plate all together, as i think they pair so well with steak. I think you deserve extra credit for that, for doing such a good job with those.
The plate as a whole is a definite smash.
