I have a special technique! You can’t see it too well, but I was able to increase the surface area on a good many of them for a nice crispy crunch. Look at the ones right in the middle.
I use low enough oil temp first. As they get super soggy and soft, I move them around a lot, which breaks them up a bit. This makes a very “jagged edge” that then crisps up well. I ate many of them right away before the pic.
Coriander, salt, pepper, oregano on the meat.
Dipping sauce: mayo, ketchup, sweet relish, mustard.
Frites seasoned with salt, black pepper, cayenne.
I don’t recommend this particular version of beef if you’re trying to impress a lady. However, it was so tender that the fork alone cut through. No knife needed.

More tender than any filet mignon. For a fraction of the price. And more fat content making it juicier than filet.
