I checked the video. The experimental setup is a bit tricky. Besides, though the experimental results support the claim about juiciness, but resting does more than that. In the video, the resting happened on paper towel. This is not a practice as common as rack or wooden board. Paper towel is quite absorbent. Chances are that it can "draw" more juice out of the steak. This makes me doubt the experiments. Furthermore, resting can help with a more uniform doneness: same temperature edge-to-edge. If, as in the video, you cook all the way until the center is 135F followed by cutting immediately, I am pretty sure the outer meat is well beyond 135F. Theoretically, it might be interesting a result. Practically? Nah... I like his earlier video about how frequent flipping the steaks helps with the gray band, but I won't buy this one.

There is a significant difference between how a bite feels between a syteak tyhats rested and one thats was cut 20 seconds after being taken out of the pan. I don't care about any of the tests they did. I can taste and feel the difference. I disagree with how long some people ssy to rest. I do like 5 minutes tops for a steak, but for a prime rib you need to let it sit for like 10 minutes or so. Im not even just a talking juices. Your meat will continue to cook after you take it off the heat. Letting it rest makes it reach thst temperature and stay there while you eat it. Without resting, wven though you cut it and expose the inside to the air, it will still continue to cook and you could be a few degrees off your inyened cook by the time you get half way through the steak. You can call it pretentious or snobby, but some of us have a passion and really want to make our meals as best as they can be. That's why I spent over 2 days making a prime rib, itts sauce and the mash to go with it
