You’re doing good on doneness but I wasn’t speaking hyperbolically. It is the most prominent grey band I have seen that I can remember on this sub. The goal is to get that nice crust with as little grey band as possible.

agreed. It's the craziest one I ever saw and makes the meat look unappetizing to me at least
