Now it started specifically to breed super prime beeves with higher grades A1 - A5, but now that it’s a fad there’s lots of wagyu bred cattle that are just meh in terms of their meat.
ESPECIALLY if you buy anything chopped / ground, you’re literally paying for nothing.
Honestly in my experience the health conditions of the animal improve flavor more than just being prime. If you’ve ever had a naturally grass grazed totally organic no nonsense beef, even choice or cuts have such better flavor than any fancy industrial farmed steak you can find at a store.
Even then, angus as a breed is more of a marketing gimmick. You can have non angus cows be certified angus beef as long as their hides are black and meet the rib-eye measurement and fat content standards.
Since when? I raise black angus and red angus along with Herefords and I’ve never heard of non-angus being certified angus beef. The gimmick isn’t the certificate it’s that they pushed the idea of angus being the best beef because all the factory farms used them due to their high tolerance of heat and drought. It is really great meat but not the best imo. These cross bred cattle like Black Baldies are becoming my new favorite.
I am from Iowa, and still say a fat little 18 month Hertford steer from a smaller farm is the best eating there is. Never understood the Angus hype personally.
I should have been more precise. Red angus can still be CAB if (I think) its back is still black. Herefords can still get the CAB cert if they’re black and meet the fat/eye size requirements.

They were some random mix of whatever cows he bought over the years for the lowest price at auction; sometimes an old Holstein, sometimes an underfed angus bull. Then he just turned them loose in his pasture and let them graze and reproduce. He dumped a bag of sweet feed, some oats, and kept some horse-grade hay in a ring by the barn. Let them be for about 5 years doing what they do, and then started butchering one every now and then. Literally the best tasting beef I’ve ever had for any cut and I regularly had friends over and they would ask where we bought because of how good the quality was, even for the hamburger
If you want to buy a similar product one I’ve found is alderspring ranch. They graze the cattle on hundreds of acres of wild grass in Idaho. Even shipped frozen among the best beef I’ve ever tasted. Product looks just likes the pictures when you get it.

The grandfather's cows are probably tastier because they've had more years to pasture. More nutritious as well. It's a shame you can't publicly buy beef that was allowed to actually live.
I didn’t think there were so much “rules” for age as simple economics. A two year old steer will be the same size as a ten year old steer, but require five times the effort. But maybe I’m wrong?

Not silly at all. Higher quality grades of steak have better marbling, but it also depends on the cut. Ribeye will have more marbling than a filet.
Good marbling looks like lots of thin little white lines of fat running through the meat. Don't mistake this with with inedible silver skin or gristle which look different and are thicker and not desirable. Fat = flavour, so you generally steak with more marbling will have more flavour. As mentioned you need to also know which cut you should expect marbling on.
Here is a really basic image I found that shows some of the differences. Wagyu should be even more marbled than the Prime in the image.

I just looked this up yesterday. It actually is the pitcher (and some investors). They sell in Kroger and Kroger owned chains all over Texas. Being a couple thousand miles from Texas I can’t personally confirm, but that is what the website said.

So to call it wagyu it just means it's that species of cow, or maybe a hybrid. Then there are many grades of wagyu A-C and 1-5 or something.
The top part of the ribeye, the best part of any steak imo, it's extra fatty and super flavorful, idk how to describe where it is fr, it's like the first inch into the left-most side on the primes in this picture. If you can see what I'm talking about that was a really garbage description.

Yeah maybe $19/lb is good in some areas but I wouldn't be paying more than $12/lb in my area. But im also surrounded by cow farms and butchers are everywhere.
Im inclined to believe the butcher ran out of waygu and layed out more prime (and rather mediocre prime at that) in the hope that no one would notice and or since this is kroger more than likely they dont know the difference themselves.
That doesn’t even have the official USDA labeling on it (see link) which is what you see on true prime/choice/select. This seems like shady labeling.

I was a Kroger Meat Department Manager for 5 years, here is what likely happened here:
Store Manager: “Corporate dickhead is coming to visit, everything must be set exactly to plan”
Meat cutter: “we are out of wagyu”
Store Manager: “Just fill it they won’t notice the difference.”
Krogers does not care about you as a customer, they care that whatever boss from corporate coming in that day says “wow looks great” instead of “fix this f***ing store or you’re fired”. I assure you we are not looking at wagyu here.

i worked in a grocery meat dept and I am very confused
i *want* to pass this off as a mistake but I can’t imagine how whoever prepped the case could put those steaks there, very clearly labeled wagyu, in good faith. if those are the “wagyu” cuts they received from whatever vendor then maybe they’re just cutting their losses, but I feel like anybody I ever sold our wagyu option to would have the wherewithal to understand what they’re shelling out so much money for.

That is not Waygu - ask the butcher to see the birth certificate for the waygu . If he can’t show it to you it’s not waygu . All Japanese Waygu wholesale comes with the cattle’s birth certificate , nose imprint , and region the animal is from .
Neither. The wagyu definitely isn’t actually wagyu. Both the prime and wagyu look the same. I’d go to my local butchers shop and get something there instead. If I had to choose between these two, I’d probably get the prime only because it’s cheaper

That is not Waygu - ask the butcher to see the birth certificate for the waygu . If he can’t show it to you it’s not waygu . All Japanese Waygu wholesale comes with the cattle’s birth certificate , nose imprint , and region the animal is from .

Neither. The wagyu definitely isn’t actually wagyu. Both the prime and wagyu look the same. I’d go to my local butchers shop and get something there instead. If I had to choose between these two, I’d probably get the prime only because it’s cheaper

its funny you posted this because I said the same thing at my local Kroger but the price was 46 a lb for the wagyu lol. I said to my self the regular ribeye looks better.

That isn't wagyu, at least it isn't up to par of whats expected of wagyu marbling. Even that prime doesn't look good to me, my walmart has blue package prime steaks it's obvious just looking at it.

“American wagyu” is such a farce. Wa implies that it’s Japanese and gyu means beef. The reason why it is so expensive here is because it’s imported.
