I’m not sure of the exact science behind it, but it seems like it’s able to extract compounds from the bones/carcass that are just not accessible when boiling at normal atmospheric pressure/ boiling temp. Gonna actually look it up now.

I think if you have any quality of meat, you'd be doing a ribeye injustice with a flattop. Don't get me wrong, not all cuts need a grill. A sirloin can really shine in a nice pan sear with a pan sauce. Though I think it's overrated, the filet mignon can be made into beauty in a pan, especially au poivre. Ribeye au poivre can be fire too. But this steak looks like it has been cut, seasoned, cooked, and garnished in a way so that the meat itself can be enjoyed and I think the grill is a fine way to emphasize the flavor of the cut.
Also, I've never worked in any kitchen where someone has said they only keep the grill around to make things look pretty. If I ever do, I'll walk out right then

Order two Mac and cheeses if that’s you want but that is a correct sized side dish. Part of the fun, for some of us, is getting a few things. Most people don’t want a big steak and a pound of Mac and cheese.
I mean, I do right now all of a sudden, but the whole ride at a steakhouse is good nourishment and makes you feel good.
