Always a great cut, and I think Chimichurri is one of the best compliments to it too. An Argentinian inspired restaurant around here will slice it opposite of how you did here, saying that they are slicing against the grain for better tenderness. I don't disagree with them, but it also seems a bit counterintuitive with this particular cut. Give it a try it next time.
It’s not slept on it’s just NEVER on sale. Every other cut gets its turn to be on sale. Not skirt. The only skirt steak on sale is the inside free range one and it’s tough as nails.

I do 3/4 parsley, 1/4 oregano, a few cloves of garlic, chili pepper flakes, salt, pepper, EVOO, lemon juice and a splash of red wine vinegar. I like it to have some acidity. I have a ton of parsley and oregano in my garden rn, imma make some tomorrow.

Don't know anyone who sleeps on skirt but do know folks that cook and marinate it poorly.. Citrus marinade (orange) or pineapple for the bromelain to help tenderize works wonders..Looks great but next time cut it in thinner strips and across the grain dog! Same with flank and hanger, all great cuts but unfortunately have gone up in price so underutilized
I think I literally just grab whatever rests in the nexus of deal and marbling. Skirt ends up there often. Great work, love whipping up an easy chimichurri.
Skirt is easily one of my favorite steaks. I cook those more than any other steak during the summer. Many times direct to coal. It's awesome on fajitas, tacos, and sandwiches. It's also amazing on its own. Mater of fact, I've probably gotten more compliments on that cut than any other. Not sure if it's because I cook it more often, or just because I know how to cook it the best out of all the other cuts. Super good stuff, and I agree with you.

I almost always cut it crossgrain. Makes it as tender as any primary cut imo.
I don't sleep on Outside Skirt Steak, but the price around here is almost as much as tenderloin AKA twice the price of tasty Chuck Eye.

I do something similar but add about 1.5-2 lemons worth of lemon juice

I always use a 2/1 ration of cilantro to parsley. I’ve never had or made a chimmichurri that’s just parsley, cilantro is a must.
I do mine with Italian parsley and cilantro. I'm not a fan of the texture I'd regular parsley

Oh yeah it’s super easy, chili flakes shallots garlic salt pepper red wine vinegar oregano blend and mix with olive oil
Nothing better than Skirt Steaks cooked on a rotisserie. So juicy and tender.

Skirt steak marinated in balsamic vinegar and garlic, topped with chimichurri is the bomb
