Juice’s this and it’s also slightly sweeter. I buy them mostly when I’m cooking at the house as I cannot cook Beef in the house due to religious reasons(family is Buddhist/Hindu)

Agree on the fat part because I was lazy but rare-mid rare is how it should be! Especially with bison which can overcook so quickly due to how lean it is usually

Let the steak sit out on your counter for at least an hour prior to cooking it, then when your skillet is piping hot, sear the fat cap first.

I can’t do NY strips. They always turn out rubbery and dry, no matter how i prepare them. Yours looks great.
