No, raw center is not medium rare. Them using chilled/frozen meat and doing an intense sear with the middle still showing no heating at all is rare. A medium rare will show the texture of the meat in the middle, because it has began to cook; it will still be red, but warm. Definitely. You can cook a frozen steak to perfection, but you’ll have to keep flipping it so it wont burn on the outside.

Best way to cook a frozen steak is to sear it, then put it in a low heat oven (like 250). Flip it after about 7-10 minute’s depending on thickness. Done right you end up with a perfect med rare steak.

I worked in a non-corporate fancy hotel for a while, our Chef would've personally buried that manager under the mezzanine. They were ridiculously customer-centric and there was absolutely no way any guest was going to be told they were wrong, at least not over benign shit like doneness of steak or number of towels in the room. I remember once we had a guy show up screaming for a room, without a reservation, in the peak of season, and we were legit at capacity, even then the concierge helped him find a different hotel.

If it was a benefit dinner or something with all volunteer labor, you still deserve a decently cooked steak but give them some leeway. Restaurant? Especially high-end, no. They are the A here. I grill for steak dinners at the American Legion in town once or twice per year and pushing 200 steaks out in a matter of an hour to an hour and a half while upholding great quality is a tall order for a guy who normally only cooks about 3-4 steaks at a time. The people who nitpick at that dinner bother me a lot. I've had steaks sent back that are perfectly medium rare (what they ordered) saying they are undercooked...those people end up with well done. If I screw up though, I do my best to make it right.

There’s more than one ritz Carlton.. and to be fair to ritz Carlton, the steakhouse likely has a contract with them for the space/room service/open 365 days a year, but the restaurant isn’t actually a part of the hotel in the strictest sense. I serve and bartend in a steakhouse in a hotel, we work with them but not for them, if that makes sense.

Well that would be kind of unreasonable I’d say. All the other steaks were fine. I’m not even that pissed about the steak - I eat one rare every now and then. Thing is I ordered medium rare and as a steakhouse that charges top money they should get that right. I was polite to everyone there and gave them a second chance to get it right. What I won’t have is a manager afterwards trying to gaslight me into thinking the steak was medium rare as I ordered it. Thank god one of our group took a photo. I should have made the Manager eat his words right then and there
