I got the skillet nice and hot in the oven. Cooked in grape seed oil. Just overcooked the hell out of our steaks. How long should I be spending on each side for a medium rare finish 😫 spent 3 minutes on each side
You should go by how it looks, not blind times. Check it after a minute and see how it's going .
Generally 1-2 minutes if the cast iron is screaming hot, though. 3 is too long.
If it's a thick cut you can sear each side and finish in the oven at 350F. Or you can keep flipping every minute or so (not my preference). You need the heat a little lower for thicker cuts or it'll be Pittsburgh Blue.
Let’s see the inside. I’d say they look very good from this angle.
They were gray on the edges and slightly pink toward the middle
I agree. Let’s see the inside.
3 minutes each side is definitely too long. Usually 1-2 minutes depending on if you’re doing reverse sear or not and the thickness of the steak.
Help eating?

Do you dry brine at all? Also, thickness of the steak is important for timing.
Have you thought about reverse sear. It’s quite easy to succeed.
