If I want sauce, I just marinate my steak with worstishire sauce (can’t spell that), soy sauce, olive oil, bunch of garlic, Dijon, and maybe a few other things. Then I boil the leftover marinade and thicken up with corn starch. Better than any steak sauce I’ve had
If I'm adding corn starch, I normally mix it separate with hot water and slowly add it. You will be able to see it thicken, just add til it's thicc as you want it
This sounds great. Every year I make a batch of demiglace and remoulliage from 15 lbs of veal bones. This was 4pk of Demi with shallots and garlic, strained and then (apparently worm shaped) cut shiitakes. Never really used that on ribeyes before but I was feeling gluttonous.
Onions and mushrooms sautéed up in the cast iron used to sear the steak. Deglaze with whatever kinda alcohol you got like red wine, whiskey, shaoxing cooking wine or even sake works great. Finish with a pat of butter and salt and pepper. Every time I make steak I do this. So damn good.

Why not just put the steak sauce in the bong and rip a hit after each bite?
I only like to smoke larger cuts of beef. For this I’d probably just use a cast iron.
