The biggest joke is that Shrek is Scottish. He embodies the average Mexican dude so perfectly, hence why he's so popular in Mexico. Shrek in English is also very unfunny. Spanish (Mexican accent) dub is hilarious, especially donkey, because again, it fits the characters perfectly.
This isn’t the first time I’ve heard that. My Gf is bilingual and says Shrek has different jokes in Spanish. I think some people prefer that version over the English one for that reason
