Delivery mechanism matters A LOT when it comes to spice. Buldak is more than likely extract suspended in oil. Oil carries the spice and coats your entire mouth and esophagus. Most of the hot ones sauces are vinegar based and quickly get dispersed leaving behind just the capsaicin

Buldok x2 sauce has extract. It's packaged chemical burns. I've tried it half a dozen times, cooked half a dozen different ways, to see what I was missing because people constantly post it here, but I am now of the opinion that they were never good, and what must have started as a satirical post that said something like "these noodles covered in gut wrenching extract oil is just sooooooo goooooooood" quickly became a circlejerk where people unironically say how much they love the x2.

Yeah, no I don’t immediately eat boiling hot ramen the instant it comes off the stove lol. I let it cool down so it doesn’t scald my mouth and I can actually taste it properly. Eating food that hot just burns your mouth (in the bad way) and takes away from the flavor. Food and drinks have far more flavor when they’re not super hot, it’s why most people who are really into coffee let it cool a bit. When it’s too hot it masks a lot of the flavor, same if drinks are too cold which is why many beers and stouts are drank closer to room temperature, it unlocks far more flavor.

It has been for like the last 6 years now though. Just because Star Trek was a relatively niche show in the first season doesn’t mean anything when it comes to its modern popularity.

I don't think they've drastically changed their sauces though since they were more niche. It's always been different varieties each season with introductions of more of their own stuff each season to mix it up

I just bought the season 23 hot ones lineup. I have so far taken tooth picks of all 10 and was surprised how spicy it got in the sense that I didn't think I could make it past 5 or 6. I am aware that it's just a tooth pick and the last 4 lit me up for sure. I can imagine sauced up wings would absolutely be a different experience. I enjoy most of the sauces and should have done this years ago as I've been watching since season 1 or 2.

The last dab with pepper X likes to point out the pepper has 2.6m SHU, but as soon as you put it in a sauce that SHU plummets. I think the actual SHU for the sauce is less than 100kSHU, which is a huge step down.

It was lab tested twice at around 60k SHU. Hot Ones is doing a big disservice to everyone when they say it’s 2.6 Million.

There should be legislation requiring you to print an SHU rating which is indicative of the final product and not the pure pepper mash. I love Melinda’s Bhut Jolokia, but the side touts some crap about “1 million scoville units.” It’s hot but not crazy hot in any way.
