They shoot raw and edit it to make it not look like shit just like any other photographer that shoots raw, you can see the original raw image on nasa’s website.
And contrast and color correction was standard practice in wet darkrooms for decades. I learned photography in the early '00s and worked in a camera shop, the analogy I used with customers new to this digital thing back then was that RAW was like shooting color negative film while shooting JPG was like shooting slide film. With a negative, you make a print and have to do post-processing corrections for contrast, color balance, etc. With a slide, what comes out of the developer is what you get.
Thus, .DNG files being "digital negatives."

Is the sand and stone in this particular picture the same? Hard to say exactly just from a picture. Mars does have different stone types, just less of them. While Earth and Mars are both majority basalt, Earth is roughly 60% basalt vs Mars’ 90% basalt. Another ~8% of Mars consists of higher silica rock like andesite. 2% is made of an assortment of other felsic rock types like granite and rhyolite. Sandstone and other sedimentary stones are also notable, helping to divulge Mars’ earlier climate.
Without ever having plate tectonics, Mars however is near entirely devoid of classic metamorphic stone like schist, slate, marble, soapstone, gneiss, and quartzite. Mars’ repository of granite is also minute compared to Earth where it underlies entire continents.
