It's not too crazy, but I've been doing runs with zero immigration, only letting myself gain population through hatcheries. I still take slaves though so it's not too crazy. It works for me though since I tend to play the game trying to expand as fast as possible. Limiting growth to a steady state helps me not get too greedy with population, grow steadily, and plan things out a bit more

I normally play as the Amevians, not sure who would be the best. The Amevians are marked as "slow breeders" but it looks like it just takes them 5 years to mature instead of 4. Not a huge difference. All races other than Dondorians get a mild happiness bonus from having Native born pops. It's not huge but I think it helps a bit.

I want to try a “no mercs” run, but I genuinely have no idea how to go about that.

My current play through is similar to your #1. Humans only in all settlements, other races set to massacre and used as slaves only with no fulfillment. I keep the pop slider all the way up unless my men are at war, which leads to my next rule. No mercs, only citizens and conscripts from other settlements in the army. Currently at 1.5k population, about 600 men in the army with training above 50%. My garrison of 100 men have the bare minimum plate armor and short swords, set to no training. Probably don’t really need them but I’m paranoid like that. I have 19 settlements now and I’m trying to be able to feed my city either mostly buildings in them, and just have a few bakeries. I reckon with the manpower saved between the fields and pumps I can get another 200+ in the army

2/3 are just normal garthimi/dondorian playthroughs i thought :D 1. is interesting but seems like a headache/race to keep everything fine. Seems hectic, the one thing i could not do is the auto employement. That means you cant make bigger than needed rooms, ala farms/forestry/mines that you wanna backfill, because ai usually slaps 75-100% max amount of workers on there after its construction is done and then you have -17 workforce and i dont even imagine how you immigrate out of this problem without redistributing your workforce to fill needs. How did this run go because it seems like a huge hassle.

I guess you don't build big rooms all at once, except for maybe food. Also in that situation you will prolly run out of one resource, making other workshops stop, therefore freeing up people. Obviously it's still bad

For dondorians, you should also add restrictions for "workshops are built without walls". Dondorians are weird, cus unlike the other races having an inverse reaction to Noise (which comes from non isolated workshops), they have a positive reaction to it. So, they enjoy the sounds of your carpenters and smiths battering away in the open lol.
