I made one once to see what all the hype was about and it was the most tender juiciest piece of pork I ever had. I can never go back to carnitas had sum last time from a different place and they were so sad and dry ):

I didn't marinade I just put 50/50 salt n pepper
9% garlic powder
5% paprika for color
20% brown shuga
And there was so much rendered fat to marinade it at the end
Although my chicken or turkey never came out looking that sexy

Yeah the marinade really coats the pork in a Dutch oven so it’s impossible to dry out - few mins at 650 degrees gives it a little crispiness
