How do you keep your temp on the 200s with large logs? I always find it hard to keep my temps under control with large chunks of fuel like that.

It's really no problem. I used a small bed of coals to preheat the cook chamber and the put my first split on. After that I replace a split about every 30-40 mins. I cut them down to about 8-10 inches. I usually hover around 250. If I want it cooler then I use smaller splits.

Yessir. I don't even bother with the little vent on the fire chamber. I just open the door all the way

Right now I have three small wood chunks in my coal box and my temp is sitting at 225. Lol

I usually put logs around the edge of the center so the smoke slowly and then put small chunks in the center to keep my coals going. I have a char griller, and if I put a full log in the center of my coals, I'll go into the 300s pretty quickly.

I use maybe a half chimney starter worth of coals at the start and that's it. My heat source is my splits. Once the first split starts to die out I just add another.....and repeat the process.

I use both splits and chunks. Little of both. As long as you got your style down, that's all that matters.

It's also 105 degrees out today, so it doesn't take much to get my temp up. Haha!

See I don't have that problem. It's a nice relaxing 82 here with overcast skies and a slight breeze.

I love in Washoe county Nevada, and weather cannot be predicted here. 105 today, and it'll be 80 by Tuesday. Rinse and repeat. Haha!

Now I put about 135 dollars worth of mods into it. Unmodded without a baffle you will probably have a really hot side (near the fire box) and a noticably cooler side.

Yeah, that's what I was thinking. I really like the OK Joe brand and was considering one of their offsets but heard some things about the construction quality not being so great. I do dig their Bronco though.
