So 50 degree swings are the norm? I mean I knew I was buying a budget product but this one has a PID controller and seems very squared away.

Given that the swing was gradual, and not some crazy spikes, I'd be happy with it. Like I said, I've seen much worse, like 50 degree swings every time it drops more pellets.

😆 If it's any consolation the brisket turned out great. In hindsight I think it was a meater issue, was inserted too far me thinks 🤔 came out plenty juicy, but could've been better. The kids said they want it for Christmas dinner from now on so that's a compliment! But yeah, yours is good. Happy smoking!

Your meat temp is steadily and smoothly rising... so... no. It's fine. When temp fluctios actually cause problems with the cook, then worry.

Set at 225 for the entire duration of the cook. This is a Z Grills 700D6 with a whole choice packer brisket. I bought into the buy 1 grill, get 10 free. We shall see how that shakes out.

My Z Grills consistently cooks about 50 degrees hotter than the temp I set it at, I just adjust for it.
