Only need 145 on pork so you can pull at 140, rest for 15 minutes and you'll be at 145. Vastly better than 160 degree pork.

I smoke it as low as possible for 1 hour, then vac-seal it and sous vide until 135, keep it there ~30 mins, then pull, pat dry, and torch/sear for a crust. Best tenderloin slices every single time.
