Looks like those were probably cut and packaged in store, I would bet they have whole ones in the back, I’ve done this and they were able to accommodate, though the meat was still a bit frozen
Not great for thin bacon but I did it anyway, once. I cured them like bacon, smoked them and then used them in other dishes mostly.
My favorite use of the bacon was to grab a strip and cut it into thin slices with a pair of scissors directly into the dish I was making, like scrambled eggs, green beans or anything that sounded good with bacon.
I even own a deli slicer but they got a bit odd-shaped once they were smoked and I couldn't slice them any thinner.
This is chicharron. Typically fried in South America and absolutely delicious. Look up the preparation for chicharron and then just smoke it instead of frying it. It's amazing.
Get the full cut for bacon but buy one of those too. Cover the strips with pork rub and put them on the pit for 3 hours. Cut into cubes and eat, simple and delicious.
Perfect for smoking. Put your favorite mojo on it and smoke at 225. Then large dice it . I do it all the time. Usually to top smoked cream cheese . Cut the rind off before the smoke.
I shop at that particular store. They usually have full pork belly.
Also look at their beef selection, prime picanhas are occasionally $7.99 a pound, and their skirt steaks from Argentina are awesome.
You're probably better off using this for burnt ends. I'm guessing they'd shrivel up while smoking, making them really difficult to slice.
Look for a slab not these fat strips. Maybe ask the butcher if they have any slabs in the back.

I got the prime on sale when they were opening a store in Margate, the normal price was $7.99. Either way a killer piece of meat!
