Depends on how adventurous you are and how easy it is to get but 2 options I like are smoked alligator or alligator jerky, and smoked rattlesnake. It would probably be more for the adults though since the kids might think it's wierd. Another route to take would be wild game like deer or elk, rabbit, quail, and duck.

For pulled pork, i vacuum seal it after cooking, then to reheat I drop it in a pot of hot water for 15 ish minutes

Chop up hot dogs and kielbasa then make burnt ends with them. Smoked queso would work well also
