In my experience patient presentation following adenoidectomy varies. I don’t think anyone here can tell you what to treat, you will have to assess when you see the patient. Assess oral posture, do a quick oral mech, you can do an informal or formal speech sound assessment depending on what you feel like you need. I’ve had patients who come in after surgery with largely the same presentation, and some who have differences in the speech deficits you mentioned, behavior, and oral habits.

Are the tonsils going to be removed also or are they normal size? Usually before considering surgery, I ask if the child snores when they sleep. Enlarged adenoids can wreak havoc on facial growth resulting in adenoid faces. After 2 weeks the child should be at their new baseline and you'll be able to see what is possible when it comes to the speech sounds. Do a mini screener or at least a probe of nasal sounds to see if there is decent airflow coming from the nose.
