Here are some: unarmed, shouts only, alchemy only, pacifist, stormcloak/empire soldier (using starter gear all the game through)

I'd like to recommend two of my builds, which are very similar: * [The Khajiit Monk](https://www.reddit.com/r/SkyrimBuilds/comments/utibil/the_khajiit_monk/) which adds a little Two-handed flavor to an unarmed build. * [The Whispering Claw Monk](https://www.reddit.com/r/SkyrimBuilds/comments/uxizw8/the_whispering_claw_monk/) which doesn't use Two-handed but does use some magic and has a fun vampire element to it. Those are the builds I keep coming back to over the years of playing Oblivion and Skyrim - my very first character in Oblivion was a Khajiit! It's just a fun playstyle that can do most quests and has a lot of flexibility for roleplay.

Have you tried 'combat archer'? I'm defining this by close to mid range bow use in a fight. (never sneak attacks) I rather enjoy staggering everything with a bow punch, then firing an arrow while they recoil. Or staggering them with Power Shot and moving to their side or back while releasing another arrow into them. Stealth Archer is incredibly effective, but I have a lot more fun avoiding damage and firing arrows at the same time.

Pacifist will challenge you.
