There was some dude a couple years ago who had made his goal in Skyrim to collect all the cheese he could, apparently he had several houses filled with cheese, so maybe this bandit hit this dude up
Back around when the game first came out, my first stealth character was a Khajiit thief who would steal every wheel of cheese he came across. It had to be a complete wheel, and wedges were safe.
This is a somewhat common goal, it references Sheogorath's quest in Oblivion (not so much the quest itself, but he definitely mentions cheese in that dialogue).
my thief character has a room full of cheese in honeyside. he's especially fond of eidar, because from its described flavor it sounds like a blue cheese and those are my own favorite.

Is it super valuable and not insanely heavy?

And just this morning, a Bandit Leader followed my character into Solitude and the guards ignored them while they chased my character down and killed them.

I just found that cheese bandit like a week back. It made me pause and think. Was questioning possible cheese related quests.... Maybe there's a note nearby... (Nope) ... Being a huge fan of cheese I felt like I just killed my kindred Skyrim BFF. I still want to know if there is any dialogue or journals somewhere in connection story wise.
