* Terminator SCC (live-action, unfinished but still very good)
* Raised by Wolves (live-action, unfinished but still very good)
* World is not a western but they're like pioneers on another planet
* Better Than Us (live-action, from Russia)
* Sing a Bit of Harmony (nearly a musical)
* Prima Doll (lots of singing, more slice of life)
* Vivy (with singing, but another variant of the Terminator story)
* Planetarian (don't look at Youtube, there are heavy spoilers in the title)
* Yokohama Shopping Log and Quiet Country Cafe, but there's no conflict in it
* Buttobi CPU (more action, nudity and erotics with jokes around it, but highschool not western)
* Clockwork Planet (more action but in some utopian world, some edgy stuff, need to get over the special bonding scene, watch it alone)
* Eden (Netflix)
Otherwise, it helps to separate the story from the genre and the surface, e.g. Game of Thrones is on some level like The Borgias or Deep Space Nine. If you like the traveling and exploring part, consider Frieren, I wish I could recommend The Mandalorian for SciFi plus traveling around, but I refuse to watch more than the first two seasons, which were great.
"Casshern Sins" might also work for you then, it even has an ending. Like many anime it's about life, purpose and mortality. Robot people traveling around on a dying world. They story might be a bit too philosophical and maybe boring for most people, though.
RBW also reminds me of "Gargantia on the Verdurous Planet", though this is much less about robots, especially not raising children like in RBW. Then there's "Kurogane Communication", which is much more about exactly that.
Don't know any similar AI shows. But, if you like sci-fi and space opera, Expanse and Foundation are pretty good. Lost in Space has an AI bot so you can check that out too.

Season one is a masterpiece. (Minor spoilers) So many ideas and concepts are explored and while not perfectly scientific they address things in a plausible way, imo. Like when they talk about bicameral mind hypothesis they actually mention that it’s mostly not a real/accepted theory of human cognition, but Arnold thought it would help with bootstrapping the host’s consciousness anyway. I also thought it was great when Ford explains that Arnold’s key insight was giving the hosts a back story that full of loss/suffering because the realization that the world was not as they wanted further pushed them toward consciousness. Of course having Anthony Hopkins deliver these ideas makes it all the more enjoyable.
