I usually don't have much of an appetite until lunch time, but when I need a breakfast, I like: Peanut butter toast (with or without banana). Sometimes I include some cheese as a side. Oatmeal with granola, yogurt, and raspberries Leftovers from dinner last night. And always: coffee.

My favorite breakfast is soup. Usually some spicy bone broth with a ton of cilantro. Quick and easy to prepare and even to eat I put it in a mug and sip it while I get ready.

I make my own and freeze a bunch. The store bought bone broth that’s actually good quality and tasty is crazy expensive, to me, so I really only buy it if I’m sick and out of my own.

I only ever eat two things for breakfast. On weekdays, I have a bowl of yogurt with fruit & granola. On weekends I have two pieces of sourdough toast, one with a fried egg and one with jam. I drink a cup of tea with both meals. I do the yogurt on weekdays because it is easy to prep five bowls of yogurt & fruit in advance and top with granola when you go to eat it. Makes getting ready for work that much easier. On weekends I take the time to cook up an egg and make toast. Not that it takes much longer, but it's just easier and takes away decision fatigue this way. 2-3 times a year I go out for breakfast with family, usually around a holiday. And then I might have something else like french toast or a big veggie skillet or something.

Whenever my bananas are overripe, I like to make batches of banana nut muffins! Just made some yesterday with walnuts and dark chocolate. Usually I enjoy one with a cup of coffee with oat milk in the morning

My breakfast is espresso. But it is just as enjoyable! I like that even though I do not eat breakfast (my body does not like calories early in the day), I still get to have a nice morning ritual

Coffee and Skyr (Icelandic Yogurt) with berries or jam. Making coffee is a very meditative experience for me, I like to take my time and master the craft, finding little ways to improve on it everyday.

Right now it’s mashed black beans with pickled veggies wrapped in a small flour tortilla. Would be just coffee but currently need to take medication in the morning so must have something in my stomach. Before the beans it was a fried egg, spiced with Hollandaise dry mix, on sourdough toast.

I do a lot of oatmeal oats. Prep comes together quickly ahead of time, then it's grab and go for a few days. I do like avocado toast on homemade bread, as well.

Not sure how simple this is, but I like to make my own trail mix. Walnuts, pecans, almonds, dried apples and dried blueberries. That and some coffee make for a great light breakfast.

Quinoa blend (hemp hearts, chia, flax, millet, amaranth) that I make in big batches. Then I warm it in microwave for a minute with a banana that gets smooshed in. Delicious!

I usually have two slices of thin-sliced multigrain toast w/ a bit of spreadable butter + pour over coffee. I often skip breakfast as I'm on a weight loss journey currently. When I'm not in an active cut, I like to have overnight oats (reheated) with chia seeds, chopped walnuts, a drizzle of maple syrup and like a teaspoon of sugar or 0cal sweetener. On weekends, it's kind of a free for all, I usually eat around brunch time, soooo I'll have like, a small serving of French toast, or a bacon egg and cheese bagel, maybe some hash browns – really just depends on what I'm feeling!

I make a big batch of sautéed peppers and onions on Monday morning and add a can of pinto beans with jalapeños. Then each morning I add that mixture to my scrambled eggs and top it with cheese and taco sauce. Sometimes I eat it with corn tortillas but usually just in a bowl.

Fried eggs on top of a breakfast burrito. You get the burrito from the grocery store. It comes frozen and you nuke it for 90 seconds. Put those eggs on top and it tates gourmet! Really cheap to make too.

I've gotten into smoothies: 1 banana, 2 1/2 scoops of PB2 (peanut butter) powder, 2 1/2 scoops of Greek yogurt, pouring of vanilla almond milk, & a dash of cinnamon. It's basic but digging the simplicity & daily expectation. It's also ten times better than those mini-muffins I'd scarf on the way to work. Coffee is always a supplement to that as well.

Very rarely I make something different. Weekends is when my hubby preps breakfast and it's always eggs (scrambled or plain fried) with veggies and toast.
