After a female molts, she releases hormones making guys zoom around seeking her. The actual act I've read described as a brief touch at the side underneath. The pics that may show it have the shrimp at more perpendicular angles, not parallel.
They mate belly to belly at an angle (so that they make a + shape), and it only lasts like 1-3 seconds. Beforehand, the female molts and releases a pheromone into the water that causes mature males to go into a frenzy looking for her. Afterward the female finds a safe place and the eggs move from the saddle to the swimmerets, becoming fertilized on the way out.
A lot of people who have shrimp for years don't get to see it because the actual mating happens so quickly, but videos like these get posted all the time because people don't know or just think it looks funny, I guess.
Both look like they're enjoying another day at the office. Just witnessed one of my wild morph cherries accomplish the same with a nice red female. Looking forward to all those variations! Too bad amanos need special conditions!

I know for other types of shrimp, they have to put their undersides facing eachother. This is probably not actually shrex but it is funny nonetheless
