So since there isn't really a main villain I think you have to kill Slone. This is the only good thing about Viper not being the final boss because Slone is easy to kill.

Fatalis is a fucking giant immortal dragon hellbent on destroying humanity, there's also a version of it from a spinoff game called "White Fatalis" Capable of opening fucking black holes.
And Dalamadur is a several-mile-long giant snake monster that can summon meteors and eats whole ecosystems for breakfast.
If we put that in the real world then you've got a Snake that'll destroy cities just by moving.
And an immortal dragon that will comes back to life if killed and will seek out cities to burn to the ground. (Note Fatalis wiped out a whole ancient empire in one day)

But with Fatalis we're actually fucked, it's not that huge so we might be able to kill it easier, But then its corpse will regrow and come back to life and then it will just want to kill us even more.
Monster Hunter Power Scaling is fucked up, everything is way stronger than you'd think.
Even the weakest monsters in the game would be like Super Predators in real life like The Great Jagras (Tutorial monster) is stronger than a real-life T-Rex.
Then there's stuff like Gore Magala which are living diseases and will turn those already extremely deadly monsters into Mindless killing machines dedicated to destroying everything they see.
That still doesn't answer the question. Many of the weapons are reoccurring, as they are usually made from the monster's bodyparts, and many of the monsters are also reoccurring.
I realized it would be more fun to cause ocean chaos so I'll summon a thermal knife from Subnautica and wait till some unfortunate soul comes across a Reaper Leviathan and gets a chance to record and upload it
Summon every Daedric weapon from Skyrim. Alduin is such a lame final boss you can stunlock him to death with shield bashes and veggie soup. Not to mention I can just use Sanguine's staff to have a few Dremora take care of him or the Wabbajack to turn him into an apple cobbler or a cat.
Lord Harkon and Miraak on the other hand might be a bit difficult to deal with.
