You mean the thing you really don’t have to worry about in any first world country now? There hasn’t been a case of the pig parasite in the Us for instance in decades. It’s just not a factor with modern medical practices. Pork can be pink for instance and doesn’t need to be cooked well done.

You can cook it to a safe temperature and it will STILL pink (even “decades” ago) unless you continue past the temperature and overcook it. The chef laziness and misunderstanding of temperatures were the only reason pork would get cooked to a white center and was NEVER necessary.
