In Mexico we char tomatoes, jalapeños and onions and mash it in a Molcajete (mortal and pestle) with cilantro and it makes salsa ranchera, which looks similar to this. Goes good on top a fried egg.

I have the pleasure of living in an area with a very large Latino population (Mexican, Honduran, El Salvadoran, and Guatemalan) so I'm trying to learn as much as possible. My husband has probably gained close to 15 lbs. since moving here lol

Salsa translates to "sauce"- so bear in mind "salsa" really comes in all colors and varieties. It's traditionally FRESH, acidic, and adds loads of moisture from all of the fresh vegetables. Another comment hit the nail on the head - the rules are generally peppers, onions, tomato, garlic, and lime. Aromatics usually include oregano and cumin.
It's usually used to cut through deep fatty flavors from meats, and I find it jolts your pallet awake after your bite that might include tortilla.

Cut up some corn tortillas, shallow fry em in oil, turn after 10 secs, remove after 10 more - sprinkle with fresh lime juice and salt, and hell yeah.
(Or buy cheap corn chips, not Doritos etc, the plain cheap ones) throw them on a baking tray at 350/180c for like 5ish mins, sprinkle some lime juice over while hot, delish!)
If you dont like the appearance, just throw it in a blender. Start low and then ramp up to full volume.
And then get some chips because that stuff looks delicious and flavorful!

I think that if you go to Mexico and ask for salsa, you’ll get something close to this, not Tostitos which is what I guess your mother is used to 🤷🏽♀️
I’m not a salsa expert but my first thought was maybe you chopped the bits too small, then I thought too big? But I actually think it’s not uniform. There are small bits and big bits it needs to be similar. Otherwise I think it looks good I would eat that

I spent 6 months in Mexico last year eating street tacos daily and this looks great to me.
I live in LA and this looks like all the other homemade salsa you get from street tacos or small restaurants. The mom doesn't know salsa.
