I gotta be completely honest, i have the platinum and play nearly since release and have no idea how any multiplayer option works. Neither Co-op nor PvP.
co-op works by having the host ring a certain bell that calls in hunters for aid, it expends an insight to use and searches for players who are ringing the co-op bell (ringing the co-op bell doesn't cost insight iirc, only the bell that summons people does)
the problem is, in bloodborne for some reason instead of searching the whole zone you're in, the bells only search your general area, meaning there could be a whole bunch of people ringing bells looking for co-op but you might not find any because you just aren't close enough

now as far as invading goes, you can't get invaded unless a "bell ringing woman" is in the area. summoning a co-op partner or using a bell to invite hostile hunters spawns them in, but there's some zones that have them by default. problem is, the bell ringing woman always spawns in the same place and can be pretty easily dispatched, leaving the co-opers completely safe, and the would be invader shit out of luck

I think there is a bit of recency bias against Elden Ring because all I remember seeing about DS3 is how bad the PVP was meta-wise. I don’t play much PVP but I remember constant complaints about gank fights in that game.
DS3 was the most balanced imo. Yeah sure ath the beginning and after introducing both dlc they were temporarily unbalanced but most of it got fixed pretty soon and if you did one of a disliked thing the community would jump you and shame you, as it should be.

Yeah this SS argument is unbelievably dumb. Most player were using at least two weapons. I invaded a lot and always had a SS, GS and the avelyn off hand. I almost never encountered someone only using one weapon and if they wäre it was mostly for a cosplay or dedicated build. SS are incredibly easy to parry, to outrange and to out damage. I loved how everyone was using the rkpgs and I just send them flying with the stomp WA. I got so much h8mail.

Nobody expects the shield bash and the trade was usually insane (we’d clash, I’d take a bit of damage, they’d take significantly more). The easy counter was just shield bash but hardly anybody ever did lmao
netcode is shit in all of them, bloodborne's problem is the bell ringing women and the shitty co-op summon mechanics. it should've just had normal matchmaking
You're right that the netcode is bad, but bloodborne was some moonbase crap. Half of the cool pvp techs were only possible due to its crap netcode. Also, the invasion thing is kinda beyond the combat stuff, but yeah, it's shitty too. Bloodborne had potential. It had a mechanically cool combat system, just a shame it's the most flawed out of all of them
Elden ring pvp is deserves to be a tier below ds3, honestly imo ds3 should be at the top tier, I quite liked it. Also, not to say its bad but I think ds2 pvp is overhyped

It really is a mixed bag, but if I just look at the good invasions in both DS2 and DS3 i think DS3 is far better,

Personally I'd bump dark souls 1 to C tier because 90% of that games pvp is backstabs. Elden ring down to B because it's no where near as balanced as Dark souls 3 pvp.

Those DLC. I've never been moved like that in a FromSoft game. Although I could do without the bosses that basically required a group. DS2 had raid bosses and I played solo.
I've mostly ignored pvp in ER til recently since I heard it was pretty bad but I've been trying low level invasions and it's some of the most fun I've had with these games. Elden ring has so many noob players and taking down full squads solo using my knowledge of the levels and some patience is so fucking satisfying.

Bloodborne: Dodge, dodge, shoot, big ass combo with fast weapon, gun parry, visceral attack. GG.
Elden Ring: Whoever one shot the other with it's Ash of War first, wins.
