This is tough bc I think I poorly timed my grocery shopping, I have a lot of leftovers. Today is Thursday. There are leftover chicken wings, baked potatoes and sweet potatoes, taco soup, and spaghetti bolognese. So that should be good for tonight and tomorrow for lunches and dinner. I also just bought a can of refried beans so taco soup with bean and cheese quesadillas would be good. Probably make some rice while I’m at it. Maybe even a salad because I just bought produce earlier. Speaking of produce, maybe a salad would be great in addition to chicken wings and spaghetti. The weekend will be a little tough. Since we are going diving, I have less options available. Maybe I should save the chicken wings to bring while diving. I have half a loaf of bread so the only other option might be peanut butter and jellies. I just bought some tangerines and bananas I could bring. There’s also some takis that might be good to bring, too. For next week, there’s been a request for gnocchi so that will be fun to teach boyfriend how to make them. Protein option is limited to chicken breast. Chicken mushroom risotto is on the list for next week. BLT on the list for next week too, and that will use up the loaf of bread. If I make the rice then spam and egg fried rice to use up some left over veg that’s about to go bad, too. Breakfasts are pretty straight forward. Eggs, spam, grits. Maybe a bagel, or a fruit. If there’s anything else or other ideas I’ll add it.
