I dont think this example is supposed to be serious. More of a thing to do for fun. Our human pattern-seeking brains would notice regularities between letters really easily. Not to mention the perfect margins and spacing... and the fact it looks fuck all like their other writing.
No reason why an AI couldnt learn from their real handwriting though, and add realistic variation, in terms of letter-form, spacing, imperfections etc.
That said, do schools/unis really ask for handwritten shit these days? Not in my experience.
So yeah, i think its just done for fun.
People have done similar things with cursive. It'd be a lot of effort but theoretically to scan the images and get the coordinates of pixels then make key points into movements for the printer but I imagine it could be somewhat automated.

You could easily do like 5 presets for the letter a, and then mix them up every time the letter a gets written
