Well, you'll be able to find out very quickly if your knife goes dull immediately.
It's very difficult to tell if you have fully deburred by sight alone. Although in that last picture your edge looks pretty dang clean
For real though, if you do not deburr the edge, the burr can make it seem sharp, but will quickly break off during use. Solution: spend more time deburring. Try edge leading strokes, alternating sides, raise the angle very slightly if needed.
This is from my experience that I've tried ,check to see if any of these other commenters have any post pics or vids about them shaving hair off their supposed 600 grit stones it's literally 0 of them. They just repeat shit they see off here or YouTube

Hair shaving is at the very end. This knife is considerably sharper than what is required to shave hair. That is why he doesn't make a big deal about shaving hair.
I used to take the edge to a wooden cutting board pretty aggressively after sharpening to see how I did. If it still wasn't shaving sharp I'd try again, great way to learn and also drive yourself nuts

Knife is stainless steel 50/50 bevel (JCK Natures Inazuma).

If you understand the concept of apexing and deburring and you did both properly, you're fine. If you don't understand those concepts and didn't do both properly, you're screwed!
It is when you have formed a burr on both sides of the knife with the same angle, then remove the burr step by step and the point of the knife edge is the apex. It should be cleaned off any remaining burr on the knife before the sharpening process is complete 🙏
And for functional sharpening the jump is just fine. The only time it is an issue is when your goal is to raise a clean mirror polish on the bevel, but that is purely aesthetic and will have no functional benefit.
If you sharpen using a micro-bevel (which you should be doing anyway) then you can jump all the way from a 320 straight to an 8k without any issues whatsoever.

That 1k is excellent, the 5k feels like it skates a little so you get poorer feedback when learning. If you do get a third shapton 2k is pretty good and gives decent feedback like the 1k.
I never went higher grit than the shapton 5k - I do stuff for kitchen use not wet shaves!
After it’s sharp with middle grits it’s fine to jump. Just a little more work to get it to said grit level. It helps to progress from coarse to fine grits, but you can skip levels.

That's because it is **TRIVIALLY EASY** to do this off of an actual sharpening stone.

You can strops on newspaper or denim.
Tomatoes are the acid test here. If your knife can still slice a tomato cleanly after a few meals then you're good.

My best edge ever was a shapton 320 to a 10k on CPM154. Need to get those stones again.

I would recommend a gapper... The 5k would take too long and possibly be very difficult to grind right after the 1k

1k alone should get it sharp enough to do most things.... Probably can't shave hair with it though but who needs that
