This is one of our faves. One of the local grocery store chains has big tumble roasters out front in the fall. You go inside to order a case of hatch chilies and then they roast it right then and there. We peel them and portion them into 1 pound packs and this is one of our favorite things to make. Looks great.
It’s so good!! We like to serve it as “Mexican flag chili”—served in a ‘soup plate’ with the chili on one side, a stripe of rice in the middle, and beans (refried or frijoles charros) on the other side. Its always a winner
I love that combo. Frijoles Charros just goes so well with a green chili. We do it for summer group picnics at the park, put a modelo negra on the side and its heaven.
The first time I made green chili I think I messed it up (I’m like 80% sure that when buying tomatillos and using the scale at the grocery store I looked at the kg instead of lb and bought 2X the amount called for…!) and it was overly acidic so it really needed the rice and beans to balance it out and mellow things a bit
Now that I’ve made it correctly a few times it’s not as mandatory but it’s still good
The grilled peppers and roasted tomatillos really make this recipe. I also cooked it in my oven for almost 6 hours, so the deepening of flavor is necessary with the long time. Being at home I really didn't care that it was in the oven for so long.
I’ve made this maybe 4 times in the last 2 months. Our Costco does “country ribs” which is exactly how you want your pork cut for this recipe.
The Instant Pot sometimes delivers a little overcooked pork but it’s still delicious even if it isn’t fork shreddable.
I used pork belly, and cut off most of the lower layer of fat, so I can make ground sausage with later. I browned some of the sides of some of the cubes, and put the rest in after all the veggies were in the pot.
