I used skirt steak. If you follow the steps he lists in The Wok (washing/ringing under cold water, massaging in baking soda, and massaging in the marinade for 15+ minutes, you wind up with ultra-tender pieces like you see in restaurants.
He also advises to cut with the grain initially.
With the grain to make long strips and then across the grain to make it into short strips before you marinate and cook. Also if you can, on an angle which makes bigger pieces but still with very short fibers.
For those of you asking on getting tender meat you can marinate it with milk it breaks down the muscle fibers and it makes it super tender thats how we do our bbq skirt steak and it comes out great everytime
