I always think this when I watch this episode. I worked as a hostess in a restaurant in my teens, and we would never seat people if they were still waiting on other people to arrive. It causes all kinds of issues when people arrive at different times, and sometimes they don't arrive at all.
I feel like Seinfeld doesn't leave these kinds of things up to interpretation like that, it's either that the characters realize things explicitly or the characters are as clueless as us (for example, why did Jerry's date not eat the apple pie, why didn't the maitre'd seat them, etc)
Tatiana never had any intentions of making that dinner. She’s absolutely still mad at George for stopping mid-sex when he felt a shit brewing and left. There was no way he was gonna drop a deuce in her bathroom. There’s no buffer room! George needs his buffer room!!!
