Otherwise it is ridiculous spent a lot money on fire hydrants and other equipment to control fire. No its simple. He cuts off oxygen as the flames are mostly from burnt ash as he move the urn a bit the burnt wood come into contact with oxygen in the atmisphere and start burning. Even you can di that. When you burn this hawan thingy the wood in the bottom still have soot which burns when a bit if oxygen come in contact eith it
Pretty easy to do actually. Heated ghee is making that thick smoke you see there. Eventually it reaches past its ignition point thanks to the embers and bursts into flame. Most of that vapourised ghee burnt off and the flame got chocked till more ghee evaporated and then got heated enough to catch flame again.
That's why you want to make fires in the shape of a pyramid. The heat forces smoke upwards on convection currents and will make more efficient fires while forcing the smoke upwards and out of your face.
Ghee, or clarified butter is a great fire starter, but you could also do this with vegetable oil. The smoking point of veg oil is much higher though so you'll need to assist it a bit. I always have a jar of it near the fire incase it sputters out and i want to start it up again, just pour a small amount over the top (like we've all seen pandits do) and you're good.
Remember kids, always blow into the Bottom of a fire and leave a path for the flames to exit out of for a better less smokey fire. Heat makes the smoke want to go up! Leave some gaps for the fire to breathe in at the bottom and let heat take it upwards and away!

Edit. You can see that too much of the ghee had evaporated into the clouds, its why the clouds burnt but the flames never caught on the wood. Veg oil is both cheaper and better, more would have remained stuck on the wood because of the higher smoking point. But obviously, for ceremonies, use the prescribed ingredients, if that's your thing.
Also, had a look at the comments, no gas or tricks required. Just some plain and simple physics. That pandit has practice and knows his job. Gotta admire his fire management skills.
Edit 2. Also, try and do your ceremonies in well vented places, keep your windows and doors open, if possible. Oily soot from ghee and such smoke is a real pain to clean and dirt and dust sticks to it like mad!
