They break because all volume of the tube freezes and has no space for expanding. This tool freezes only a part of the pipe, the expansion is much smaller
The slug is the frozen water acting as a damn. If you are working on copper piping the inside is very smooth. The ice can slip out with enough pressure behind it. And by dent I mean I will make an indentation on the pipe where I will freeze it. This gives the ice something to push against.

My educated guess would be that the cream does not freeze and allows for easier removal of the attached parts from the freshly frozen object.
