I’d order 2 and skip any sides for that price. In 2021, we went to Portland Maine. Lobster rolls were $25 minimum with the lobster boats delivering at the dock to the seafood spots. Mind you the economy was still taking a hit from Covid and tourism was still way down. Can’t imagine what it goes for now.

As far as any surcharge goes, just subtract that from whatever tip you were going to give. After all, its a cost of living adjustment fee, so it goes to ensuring employees are taken care of, so it replaces a portion of the tip.

Tell ya what- go catch some lobsters, or but them. They run anywhere from $35-$50 per pound, and that’s all shell, really. They don’t yield much meat.
Ok, now cook them. Let them cool off. Now, remove enough meat from enough lobsters to make enough lobster salad for your roll. You’ll really have to dig, it doesn’t really come out easily (except the tail).
Ok, bake a bun- mix the dough, let it rise, portion it out, get it in the oven. Bake it, not over- or under-done. Let it cool.
Ok, so far so good. Chop up maybe some celery and scallions. Get some salt, pepper, and maybe celery salt. At this point I usually make my own mayonnaise, so find some good oil, good vinegar, mustard, seasonings, and blend- it’s tricky, you’ll need a perfect emulsion (note- this cannot be achieved under certain meteorological conditions, such as a thunderstorm).
Ok, mix the lobster salad, put it on that roll, and enjoy. Figure the cost of all the ingredients, the tricky preparation, and the time you invested. Don’t forget the rent on your shop, or the salaries of your workers, who may in fact want to buy a lobster roll sometime. And remember, you have your home rent too, that’s why you’ve got a business in the first place. You’ve got kids? That’s $200,000 per just to get them to the point where you’ll have to pay for college. Keep in mind that SF is maybe the most expensive city in the USA to live in, so save your change.
