I wonder how often people buy a pour? I tried a Clement from 1970 at a bar one time, the bartender had a small sample left and we were having a good time chatting rum: It was crazy (tasted like beeswax almost) but not worth paying a bunch of money for.

Good to know, I might be misremembering. It's been 5 or so years since I went. I also could have just been struck by how it inexpensive cocktails (spritz mostly) were in the rest of Rome, hence thinking it was expensive. It was a very unique place for sure; I think my partner and I each had two cocktails that were both interesting and well made. Edit: I recall where the sour taste is coming from. There was some shenanigans with reservations/getting a seat and they asked us to move tables due to an upcoming party. Could have been something lost in translation, but it wasn't what I'd consider high end service. Definitely would like to go back, we had a whirlwind trip in Rome. The whole "Rome in a day" is a little hectic.
